We sell our beef by either the quarter or the half (side). Each quarter is approximately 75 pounds of beef for your freezer, and each half is approximately 150 pounds for your freezer. We process younger animals rather than yearlings. This ensures very tender beef and smaller steaks and roasts. We find these smaller portions to be better for our health and weight as well as more logical for smaller families.

How much freezer space will you need? Each cubic foot of freezer space can hold about 35 pounds of food, so you would need at least two cubic feet for a quarter beef. We recommend a free-standing freezer rather than the one attached to your refrigerator.

Some options and advantages in ordering your own beef:
 Size of ground beef package (1/2 pound up to 3 pounds)
 Leanness of ground beef, up to 95% lean
 Thickness of steaks
 Size of roasts

Our beef is priced by “rail weight,” which is the hanging weight of the carcass.  We pay the processing charge so you pay only a single price per pound.

Your processing weight, or freezer weight, can vary by how you have your beef processed. The industry standard for the freezer weight is 42% of the hoof (live) weight.

You will be paying the hanging (rail) weight of the beef processed.

Whole Beef:  $3.75           Half Beef:  $4.00          Quarter Beef:   $4.25
